Daniela Soto-Innes Biography
Daniela Soto-Innes is a chef known for her influence in modern Mexican cuisine and leadership in the culinary industry. Born in Mexico, Soto-Innes developed an early interest in food, inspired by her grandmother's bakery. After graduating early from high school, she attended Le Cordon Bleu and earned her culinary degree by age 19. She gained experience by staging in Europe, New York, and Texas, working at establishments such as Brennan's of Houston and Underbelly. In Mexico, she staged at Pujol before returning to work full time with chef Enrique Olvera.
Soto-Innes assumed leadership of her first restaurant at age 23, opening Cosme in New York with Olvera. As chef-partner at Cosme, she became known for her innovative approach to Mexican dishes and her focus on culinary standards. Cosme received recognition as the highest-ranking American restaurant on the World's 50 Best Restaurants list. Soto-Innes also partnered with Olvera to open Atla, a casual all-day café in Manhattan. Her work at Cosme earned her the StarChefs Rising Stars Award and the James Beard Award for Rising Star Chef.
Her leadership and culinary skill were recognized by the 50 Best organization, which named her "World's Best Female Chef," making her the youngest recipient of the award. She was also recognized by New York Times and Wall Street Journal, and was listed by Travel Channel as one of the top up-and-coming chefs. Throughout her career, Soto-Innes has credited her kitchen staff, many of whom are women and immigrants, for their contributions to her restaurants.
After leaving Cosme, Soto-Innes opened Rubra in Nayarit, Mexico. Rubra focuses on tropical cooking, seasonal ingredients, and harvests from her own garden. The restaurant emphasizes creativity and collaboration, with an almost entirely female team.
Soto-Innes' culinary philosophy centers on fostering a positive work environment and supporting the contributions of women and immigrants in the kitchen.
