Gale Gand Biography
Gale Gand is a Chicago-based pastry chef, restaurateur, cookbook author, and television personality whose career has contributed to the evolution of American fine dining and dessert. Gand began her professional journey as a musician and later became a silversmith, earning a Bachelor of Fine Arts degree in silversmithing and goldsmithing from Rochester Institute of Technology before training at La Varenne culinary school in Paris. During culinary school, she developed a focus on pastry, finding the discipline and attention to detail required in pastry arts to be a strong fit for her skills.
Gand's career gained recognition through collaborations with chef Rick Tramonto at Chicago-area restaurants such as Trio and Brasserie T, as well as at Stapleford Park in England, where they became the first American chefs to receive a Michelin Red M. She was named among Food and Wine Magazine's Top Ten Best New Chefs. Gand is the founding pastry chef and partner of the Chicago restaurant Tru, which she opened with Rick Tramonto and restaurateur Rich Melman. Tru became known within Chicago's fine dining community, earning accolades from the James Beard Foundation, Michelin, Mobil and AAA guides, Relais & Châteaux, Wine Spectator magazine, and was named Chicago's Best Restaurant by Chicago Magazine.
Gand is a recipient of the James Beard Foundation Award for Outstanding Pastry Chef and was recognized as Outstanding Pastry Chef of the Year by Bon Appétit magazine. She and her partners at Tru also received the James Beard Foundation Award for Service. Gand has been inducted into the American Academy of Chefs and the Chicago Chefs Hall of Fame. In television, Gand hosted the Food Network series "Sweet Dreams," the first nationally televised all-dessert show, which aired on the network for nearly a decade. She has appeared as a contestant on "Iron Chef America" and as a judge on Bravo's "Top Chef."
Gand is the author of eight cookbooks, including "Butter Sugar Flour Eggs" and "Short and Sweet." Earlier titles written with Rick Tramonto include "American Brasserie" and "Tru: A Cookbook from the Legendary Chicago Restaurant." Her cookbooks allow her to share her approach to pastry and dessert with a broad audience. In addition to her writing, her artisanal soda pop, Gale Gand's Root Beer, has been sold nationally for more than 20 years.
Gand has participated in initiatives such as the Chefs Move to Schools program, which supports nutritional education to address childhood obesity. She has volunteered with World Central Kitchen in Poland and Ukraine and taught a Chocolate and Vanilla Master Class at a culinary school in Derry, Northern Ireland. Gand teaches cooking classes across the United States and appears at food and wine festivals nationwide, sharing her expertise in pastry arts and culinary education.
