Mark Miller Biography
Mark Miller is recognized as the founder of Modern Southwestern Cuisine, known for integrating his academic background in anthropology with a focus on bold, ethnic flavors that have influenced the American dining landscape. Miller began his culinary career at Chez Panisse, the Berkeley restaurant led by Alice Waters and associated with the California Cuisine movement. He later opened the Fourth Street Grill in Berkeley, introducing Southwestern cuisine to diners outside the Southwestern United States. At Santa Fe Bar and Grill, Miller developed his specialty in Modern Southwestern Cuisine, which became a defining force in regional American cooking.
Miller relocated to Santa Fe, New Mexico, where he opened Coyote Cafe, a restaurant that became a hallmark for Southwest cuisine. By blending traditional culinary techniques with modern approaches, Miller played a key role in shaping the Southwestern cuisine movement. He established and owned 13 restaurants across three continents, including Coyote Cafe in Santa Fe, Santa Fe Bar and Grill in Berkeley, Red Sage in Washington, and Wildfire in Sydney. Through these ventures, Miller introduced diverse audiences to the flavors and techniques of regional American cuisine.
Miller's restaurants have received national recognition and multiple awards, such as The Ivy Award, Food Arts' Silver Spoon Award, Esquire's Best New Restaurant Award for Red Sage, and the James Beard Award for Best American Chef – Southwest. He has also received an honorary Doctor of Culinary Arts from Johnson & Wales University and was named by Life magazine as one of the four most important American chefs of the 1980s, alongside Wolfgang Puck, Paul Prudhomme, and Alice Waters. These honors underscore his impact on American regional food culture and the culinary industry.
In addition to his restaurant work, Miller has authored 10 cookbooks that explore the elements, preparation, and history of Southwestern cuisine. His books, including "Coyote Cafe," "The Great Chile Book," "The Great Salsa Book," and "Red Sage," have collectively sold more than 1 million copies and serve as resources for chefs and home cooks interested in Southwestern flavors. Miller also developed a line of Southwest foods under Coyote Cocina, including a fire-roasted salsa that received the best salsa award from Food & Wine magazine.
