Grant Achatz Biography
Chef Grant Achatz is a widely recognized figure in the culinary world for his innovative contributions to molecular gastronomy or progressive cuisine. The James Beard Foundation named him the Best Chef in the United States, and Time Magazine honored him as one of the 100 Most Influential People in the World. Additionally, Food & Wine Magazine recognized him as one of the nation’s Best New Chefs, and he has won numerous awards from other esteemed culinary institutions and publications.
Achatz's culinary journey began with his family's diner in Michigan. After graduating from the Culinary Institute of America, he found mentorship under chef Thomas Keller at the French Laundry, where he worked for five years, eventually rising to the position of chef de cuisine. Achatz's time at La Jota vineyards in California and a short stage at elBulli in Roses, Spain, further developed his culinary prowess.
In 2004, Achatz partnered with Nick Kokonas to construct his dream restaurant, Alinea. Their goal was to redefine fine dining in America by scrutinizing culinary concepts and the guest experience, tableware design, and restaurant bookings. Alinea has been named the Best Restaurant in the United States by The World’s 50 Best Restaurants and Gourmet Magazine multiple times. The Michelin Guide has also awarded it the highest rating of 3 stars, a ranking shared only by a few US restaurants. In addition to his work at Alinea, Achatz has co-authored two books, "Alinea" and "Life, On the Line" with Nick Kokonas, and has released two digital cookbooks from his other venture, Next Restaurant.
Aside from Alinea, Achatz has opened various other successful establishments, including Next, The Aviary, Roister Chicago, The Office, and The Aviary/Office NYC. These restaurants have also received numerous accolades. For example, Next was named Best New Restaurant in America by the James Beard Foundation, and the following year, The Aviary was recognized as the Outstanding Bar Program in America. Achatz has also served as a coach for the Bocuse d'Or culinary competition in Lyon, France, and has launched multi-week pop-up experiences in Madrid, Spain, and Miami, Florida.
In his personal life, Achatz has shown resilience and determination, overcoming stage 4 squamous cell carcinoma of the mouth in 2007. He lives in Chicago with his wife, Samantha Lim, whom he married in November 2023, and his two sons, Kaden and Keller. Despite his busy schedule, he has made appearances on various television shows including season two of the Netflix series "Chef's Table" in 2016, as a judge on the Netflix series "The Final Table" in 2018, and even a cameo appearance in the season three finale of "The Bear."
