Sarah Schlafly is the founder and CEO of Mighty Cricket, a company focused on sustainable protein solutions and addressing challenges in food systems and food equity. Prior to founding Mighty Cricket, Schlafly worked in the food industry as a chef, culinary instructor, and marketer. Her interest in alternative protein sources was driven by a personal search for options that balanced nutrition and sustainability. After learning about insect-based protein, she developed a method for incorporating cricket powder into foods, making it accessible to a broader audience.
With experience in accounting, entrepreneurship, and corporate marketing, Schlafly launched Mighty Cricket to transform everyday foods into sources of sustainable, high-quality protein. The company offers products such as oatmeal, pancakes, waffles, and protein powder, all featuring finely ground cricket protein. Schlafly has highlighted the nutritional benefits of cricket protein, including vitamin B12, Omega-3s, and iron, and has worked to introduce the concept of edible insects to a wide consumer base.
